Sunny Winter Days

So far the winter out here in the PNW has been beautiful. I am not sure but it feels as if we have had more sunny days then rainy ones. I was told it was auld winter this year which is good but at the same time disappointing as I thought I had adjusted so well to winter this year 😄 I've barely even worn my winter coat! Don't get me wrong - I am very happy for a mild winter. 

With all the sun lately, we have been able to get out and enjoy our days : 

Yesterday we went up to Rattlesnake lake!

I enjoyed a little relaxing time 


Friday night was just so amazing we decided to have a wiener/ marshmallow roast! Our neighbors joined us and we had a nice time 
AJ is great at helping with the billows ! 

Friday's have been designated hiking day   . So after Ryan's homeschool theater class we went up to Twin Falls to eat a snack. When Ryan was little he and I spent every Friday in the woods as a way to decompress from the busy week. I have been missing that! 
What a great place to eat a pb & j sandwich.

Gluten Free pancakes and homemade syrup

This morning Adeline wanted pancakes , so she and got to work making the best Gluten Free pancakes and homemade syrup ever!!

I did not have buttermilk or white vinegar so we just used almond milk.

It does use a lot of sugar but it turns out you really only need to use a little bit for dipping!! 

Oh so yummy.  Esp with blueberries !
